In my journey of having keto diets, I try as much as possible to explore as many options as I have. Aside from tasting like super amazing ice cream, the keto pudding is absolutely easy to make too. The only difficult part of this treat is waiting for it to chill. It is perfect for a hot day treat. Adding chocolate to it is pretty amazing. 

We begin this awesome journey of delightfulness by pouring a quarter cup of heavy cream into a bowl.

Carefully sprinkle the gelatin powder on top and whisk both together immediately. 

Get the mixture as smooth as you can. Ensure you eliminate as many clumps as possible. Whatever is left, the heat of cooking will eliminate it. 

It is important to note that when applying the gelatin powder, be gentle. Do not just dump it in. spread it along the top of the heavy cream. 

After this is done, keep the bowl aside. This little time is the secret that makes this keto chocolate pudding thick and luxuriously self- indulgent. 

Next, cook the rest of the ingredients together until they start to bubble. Do not bring it to boil. Set it off the heat and add the vanilla to it.

Thicken the sugar free pudding keto by adding the gelatin mixture to it. This will ensure a thick and rich texture.

It is time to pour this pudding over into a bowl but in order not to have it melt our plastic bowl, it is important to let it cool. After it has come down to room temperature, put a plastic wrap against the top of the pudding pretty tightly with no air spaces in between to prevent a film from forming on the top of the pudding.

This is the only downside of homemade chocolate pudding. It happens when water evaporates at the same time the sweeteners and proteins shrink and get concentrated. This is not too bad and it tastes just as fine. However, it can be avoided.

Refrigerate the low carb chocolate pudding for at least 2 hours then stir until it looks thick, rich, and creamy.

This chocolate pudding recipe is a perfect dessert idea and can be served as it is in pretty dishes or with interesting toppings. The carbs in sugar free pudding are just the very amount to give you the keto expectations that you really want. It makes keto dieting a lot easier.

Sugar Free Pudding Variations That Are Made Of Chocolate

My children inspire me to check out a lot of other recipes. Trying out new toppings can be an amazing thing to do.

Berries: these are a good way to add a different spice and color to the chocolate pudding. You can use strawberries, blueberries, or raspberries. Heavy cream will be a delight.

Nuts: nuts are very keto-friendly and will only enhance the nutritional facts of the diet. A sprinkle of chopped or minced pecans, almonds, or walnuts can do the trick.

Coconut: nothing can ever go wrong when coconut is in the picture. just a sprinkle of sliced coconut can make the coconut pudding a pleasure.

Chocolate: chocolate always has a gorgeous feel and if you use it as a topping to your keto chocolate pudding then it will not only spice it up with the flavor but it will taste really good in the mouth.

Whipped cream: using whipped cream in the Keto pudding recipe is adorable. It makes the presentation WOW! 

Is It Freezer Friendly?

Our keto vanilla pudding is freezer friendly and can easily be stored in the freezer. Just make sure you use an airtight container with the plastic wrap over it. It can last this way for about 4-7 days. Leftovers can also be stored using an airtight container that has a good seal.

This is one of my favorite dessert recipes, it has no sugar and it tastes so good. You’ll love this low carb pudding

Ingredients

  • 2 cups Heavy cream

  • 1 ½ unflavored gelatin powder

  • ¼ Cocoa powder

  • 1/3 Powdered Erythritol

  • 2 Teaspoon vanilla extract

  • ¼ teaspoon Sea salt

Directions

  • Sprinkle gelatin powder in ¼ cup of some heavy cream. Make sure it is sprinkled. Then whisk these into a mixture and set it aside. 
  • Stir the leftover heavy cream, cocoa powder, powdered sweetener, and sea salt. Then, heat these for up to five minutes. When you see bubbles close to the edges then we are almost good to go. By this time, it is as good as smooth.
  • Set aside from the heat and add the vanilla extract.
  • Next up, you need to add the thick gelatin to the pan and whisk it until it is smooth and has dissolved completely. 
  • Leave it for 10 minutes to cool down. Let it be cool to the point that the plastic wrap will not melt when placed on top of it. Before the plastic wrap is put over it, whisk it once more. 
  • Place the wrap over it and refrigerate it for about two hours. 

Notes

  • For your sugar free pudding to come out soft and silk make sure you put the plastic wrap on top of the pudding and make sure it is really tight. If you do this, the usual film that forms itself on the top of the hot paste will not appear. Don’t be worried about the sugar free pudding carbs, it’s just about 6 grams of carbs.
