Cover the slow cooker and cook for about 4 hours until the broccoli becomes tender.

The next thing to do is blend! Yup, you can use an immersion blender to blend the broccoli in the slow cooker.
You can also use a traditional blender if you do not have an immersion blender, but I’d always prefer an immersion blender. It is easy to clean and makes less mess.

Here’s one of my favorite creamy soups the “keto broccoli soup”. It takes some time to prepare, but the later result is literally to die for.
1 teaspoon of salt.
4 cups of grated cheddar.
¼ teaspoon of red pepper flakes.
1 ½ cups of Monterey jack (grated).
2 cups of heavy cream.
½ diced onion.
4 cups of chicken broth.
1 teaspoon of pepper.
1 teaspoon of ground mustard.
32 ounces of broccoli florets.
2 cloves of minced garlic.
- In a 6-quart slow cooker, add the onion, broccoli, ground mustard, salt, cream, red pepper flakes, broth, garlic, chicken and pepper.
- Cover the slow cooker and allow it to cook for 4 hours until the broccoli becomes soft.
- Using an immersion blender, blend the soup thoroughly until it becomes smooth. If you do not have an immersion blender, you can move the soup from the slow cooker into a traditional blender.
- Add grated cheddar to the soup and stir until it melts properly and becomes all creamy.
- Serve hot.
- If you are using a traditional blender, allow some vapor to be released. Also, you can serve the keto cheddar broccoli soup with more grated cheese and bacon if you desire.
