It is made with a combination of roasted cauliflower, seasonings, tahini and garlic, all this to give it that superb taste. Cauliflower hummus can be served as appetizer (especially to Mediterranean meals) or it can be a quick grab-and-go snack for those hurry days.

I prefer to serve my cauliflower hummus with different types of veggies. It’s actually my family’s favorite, except for my little brother, that dude is so stuck with eating these roasted cauliflower hummus with cucumber slices. I’ll talk about that in the latter part of this article. 

For this low carb hummus recipe, we won’t make use of chickpeas. We’ll use roasted cauliflower instead and I bet you, you will hardly tell the difference because this tastes really close to chicken peas. Sometimes when I eat paleo hummus that I prepared and I totally forget I didn’t make them with regular everyday hummus. They taste so alike and so good.

How To Prepare Roasted Cauliflower Hummus

Cauliflower hummus is packed with flavor but still, it is naturally dairy and gluten-free. You can already tell that it’s nutritious. Let’s get down to how you prep this hummus.

First of all, roast the cauliflower until it is extremely soft. Do not leave it at a crisp-tender state; 

roast it until it is totally soft because you will need to blend it. To achieve this softness, make sure the cauliflower is touching the baking sheet and the pan. That way, they get properly roasted and evenly cooked. 

Also, you want the color golden brown.

Next up, blend all the ingredients together: roasted cauliflower, tahini, garlic, olive oil, lemon juice, paprika, sea salt, cumin and water. Blend until the mixture is completely smooth. Just in case the mixture is too thick, you can add water; 1 tablespoon at a time will do until you have gotten your desired texture. Avoid adding too much water at once as this can make the mixture too watery.

Once the mixture is nicely done, spread the roasted cauliflower hummus on a plate or in a bowl and sprinkle olive oil on it, then top with paprika, parsley, cracked pepper and kalamata olives. 

If this is too extra for you, you can simply sprinkle paprika on it and eat with some sliced cucumbers (remember my brother??? Yeah!!! This is exactly how he likes his) but I’m the extra one so I go with the first.

Can I Have Hummus On A Low Carb Diet?

The answer to these two questions is, No!!! Hummus is not low carb. The carbs in hummus are high so it isn’t fit for a keto low carb diet. At grocery stores, most of the hummus sold are not low carb because they are made with chickpeas so, I prefer to make it myself because then I can be sure that I’m making it right.

Can I Prepare This Roasted Cauliflower Hummus Recipe Ahead Of Time?

You sure can!!! Make a large quantity of healthy hummus, put it in an airtight container, and store in a refrigerator for 4-7 days. Putting it in an airtight container is necessary if you want it to last longer.

How To Freeze Paleo Hummus

If you have leftovers of roasted cauliflower hummus or you simply want to eat it later, put it in an airtight, freezer-friendly container. It can last 4-6 months in the freezer.

Whenever you are ready to eat it, set the keto hummus in the fridge overnight and it’ll be ready to eat or if you want to have it as lunch, put in a lunch box and it will be defrosted by the time you want to eat it.

What To Serve With This Keto Hummus

You can eat cauliflower hummus plain or you can serve it with veggies like a carrot (if not strictly low carb), celery sticks, bell peppers, or cucumber slices.

Ingredients

  • 4 cups cauliflower florets (1 lb)

  • 2 tablespoons lemon juice

  • 2 cloves garlic (minced or chopped)

  • ½ cup tahini

  • ¼ cup extra virgin olive oil

  • 1 ½ teaspoons cumin

  • ¼ teaspoons paprika

  • 3- 5 tablespoons of water

Directions

  • Preheat your oven to about 400 degrees and then grease a baking sheet (nonstick).
  • Spread the cauliflower on the baking sheet with 2 tablespoons of olive oil. You need to do the spreading in such a way that all the cauliflower is touching the pan.
  • For about 35-45 minutes, roast the cauliflower until they are brown and falling apart.
  • Pour 2 tablespoons of water, lemon juice, and remaining 2 tablespoons of olive oil into a food processor. Add the cauliflower, paprika, cumin, tahini, garlic, and sea salt. Blend until it is smooth and creamy.
  • If it’s too thick, you can take out about 1-3 tablespoons of water. Take out 1 tablespoon at a time until you get your desired texture.
