  • 2 large eggs.

  • 1 ¼ cup of Almond flour.

  • ¼ teaspoon of sea salt.

  • 1 tablespoon of gelatin powder.

  • 2 tablespoon of Psyllium husk powder.

  • 2 tablespoon of warm water.

  • Frying oil.

Directions

  • Mix up the ingredients, add the gelatin powder, sea salt, almond flour and Psyllium husk powder in a food processor. If you don’t have them available, you can buy them from a physical store close to you.
  • Add your eggs and water to the processor and process till it forms a dough shape. If dry, add a tablespoon of water till the desire dough shape forms.
  • The next step is to section out the tortillas, cut them into sections, it can be in 5 or 6 parts.
  • Roll each section of the cut tortillas in a small ball.
  • Using a rolling pin, roll a circle out of each ball, make sure you roll it between two pieces of parchment paper.
  • Place a cooking pan on the fire and add very little oil.
  • Place the tortillas one at a time inside the pan and cook each side of the tortilla for about 60 seconds until it is golden in color.

Notes

  • I recommend you don’t apply too much oil to the pan, or you might ruin the whole process. Just a little amount of oil would do. Also, do not allow the edges of the tortillas to get too crispy because they’ll break when you are trying to fold them.
  • When you want to roll or fold, make sure you do it gently. When the Keto tortillas become stiff, you can use a MicroWave to reheat it.
