The first step to roasting eggplant is to wash the eggplants, after washing them clean, slice them into a thin circle. If your slices are thinner, you’ll get more caramelized edges on your eggplants, it actually saves baking time too.

Next up, you need to arrange the eggplant on a baking sheet, after laying all the eggplants in the baking sheet, get some olive oil and sprinkle a little on them. Also, sprinkle some garlic powder, sea salt, and black pepper.

Flip over the eggplant slices and repeat the oiling and seasoning process on the fresh side.

The next thing to do is to roast eggplant, place the baking sheet inside the oven and roast and roast for about 30-45 minutes. They should become quite soft and golden.

Healthy and mouth drooling roasted eggplant slices recipe, It takes just 6 minutes to prep and 30 minutes to cook. You’ll love it. 

Ingredients

  • ½ teaspoon of Garlic powder.

  • ½ teaspoon of sea salt.

  • ¼ teaspoon black pepper.

  • ¼ cup of olive oil.

  • 2 medium-size eggplant.

Directions

  • Preheat your oven to about 204℃.
  • Use a sharp knife to slice the eggplant making circles. Get rid of the leafy end after slicing all circles.
  • Get a baking sheet, arrange all the sliced eggplants giving space for more eggplants.
  • Sprinkle olive oil on the sliced eggplants, also sprinkle black pepper, sea salt, and garlic powder.
  • Turn over the other side and repeat the sprinkling process.
  • Place the baking sheet inside the oven and leave for about 30-35 minutes, that should be enough time for the eggplant to become quite soft and slightly golden.

  • Eggplant recipes are the most simple to make, but a little mistake can ruin the whole process, make sure you follow the steps correctly. Also, when drizzling oil on the sliced eggplant, don’t drizzle too much.
