For some weeks now, I have been on a keto diet. I really did not want my family to join me on this because I would love them to really enjoy their meals the normal way. All fingers are not equal and certainly, not everyone would prepare the same kind of thing. For me, I prefer to start with my fresh cauliflower (a head). Making cauliflower rice out of the fresh cauliflower head will require you to use a food processor. Process the cauliflower florets until you have small pieces of rice.
After processing the cauliflower rice, get and heat up your favorite skillet, then start cooking.
Heat avocado oil in a pan. Do not put so much of it though, let it be equivalent to the amount of cauliflower rice that you have there. Stir-fry your onions, ginger, garlic, and some cooked chicken. Get all these to steam together. If you notice that it is almost fried then you can add your cauliflower rice.
You can use the coconut aminos for seasoning alongside Sriracha or good old chilli paste.
If the cauliflower rice begins to soften then you know you are so on the right track. Shift it a little in the pan to one side and crack some eggs in.

2 tablespoon olive or avocado oil
½ cup dried onions
1 clove garlic, mince it.
1 teaspoon of fresh ginger, mince it.
1 cup of shredded chicken. Make sure it is cooked.
4 teaspoon of soy sauce. Do well to divide it.
1 pound of riced cauliflower.
1 tablespoon of chili paste.
2 eggs. Not medium, large.
1 tablespoon of sesame oil
1/2 cup of scallions. Make sure it is chopped.
Directions
- Get a big size skillet and heat oil on it.
- You can add the onions as soon as the oil has heated enough. When the onions get to looking translucent, that is, it begins to look transparent in the oil then it should have heated enough.
- Add the other ingredients into the same pan with the onions for a stir fry. The garlic, the ginger, and the chicken. This should be there for about two more minutes.
- To the skillet on fire, add riced cauliflower and put 3 spoons of chili paste and some soy sauce. This should be about one tablespoon of seasoning. Stir this mix appropriately well and be sure the cauliflower has been softened enough and this should be approximately within 3 minutes.
- When it gets soft enough, push the cauliflower to one half of the pan, and then crack the eggs to the other half. One teaspoon of soy sauce can do the trick.
- Mix everything thoroughly. The cauliflower rice and the egg scramble.
- Remove pan from the stove.
- While stirring, add the scallions.
- The final step would be to drizzle some sesame oil over the top and serve.
