You don’t need too much to make this delicious and keto friendly low carb chicken enchilada casserole from the comfort of your kitchen, I’ll be giving a detailed explanation of how I made mine. This chicken enchilada is packed with all the exciting flavors of a typical Mexican dish. I have discovered that Mexican meals are soothing in summer and wonderful in winter.

Perfect Tortillas For Low Carb Enchilada Casserole

Most of my colleagues have had to battle with perfect tortillas for these recipes. But not to worry, I’ll let you know my homemade solution. 

It’s my low carb coconut flour tortillas! I do suggest that for maximum pliability, gelatin be used (optional). 

There are other optional ingredients but there are three main ingredients, they are coconut flour, almond milk, and eggs (half dozen). The final result is similar just that ours would-be softer and perfect for enchiladas. But if time won’t favor you, you can buy coconut wraps.

The Art Of Making Low Carb Enchiladas

In almost every grocery store today, what you will find will have sugar and starch, I’m yet to find an exception. This got me to appreciate homemade enchilada sauces.

The first thing is first, you need to saute the garlic with some oil in a saute pan, after that, you can now add the chicken and the enchilada sauce. Thereafter, add the chicken and the cilantro then simmer for about five minutes until it thickens. 

Pour the chicken mixture into each tortilla, carefully roll up and place gently in the baking dish. If you have some sauce left, pour it over the enchilada and put some cheese on top. You can foil the pan, put it in the freezer, and serve later perfectly casserole. You can add more sauce to your taste.

To cover more surface area, the cheese should be finely shredded as coarse cheese will cover less surface area. But you can do without the cheese if you need a dairy-free recipe but more sauce will be needed to make the dish.

After all is said and done, place the pan in the oven (preheated) and allow it to bake for 15 minutes, basically till the Cheese is gooey and the casserole is hot( delicious and spicy).

Help the casserole come alive by sprinkling some green onions just before you pull it out from the oven.

Ways To Serve Low Carb Enchilada Casserole

With or without a side dish, this keto enchilada bake can be served. But if you still want to please your taste buds, you can make another keto low carb diet and enjoy your day off…

It can be served with guacamole, sour cream, and of course sliced green onions…

Making Enchiladas Ahead

Here are a few tips to prep enchiladas ahead of time. You can make the enchilada sauce, chicken filling, and the tortillas separately ahead of time. But I prefer putting everything together, putting in my casserole pan and refrigerating until my set time to bake.

Freezing This Low Carb Enchilada Casserole

Thinking of how to freeze this delicious goodness? Sweat no more!!! Lay foil in your casserole pan, leave enough foil outside the pan. Pour and assemble and allow to cool. The foil could be laid twice in the pan (having 2 layers). 

Once cool, lift out of the pan and wrap sealing all sides and put in the freezer. 

When you are ready to serve, you can simply remove from the freezer, put back in the pan, and put in the preheated oven for about 30 minutes at about 325-350 °F. 

If for any reason the cheese begins to burn, tent the top and with the foil and continue baking.

Ingredients

  • 4 cloves of garlic (minced)

  • ½ cup of chicken broth

  • 1 recipe coconut tortillas

  • 1 recipe gluten free enchilada sauce

  • 1 tablespoon of avocado oil

  • ¼ cup of green onions

  • ¼ cup of chicken broth

  • 3 cups of shredded chicken

  • ¾ cup of Colby jack cheese

  • ¼ cup of fresh cilantro ( chopped)

Directions

  • After making low carb tortillas, Make the enchilada sauce.
  • Place the pan on fire, pour oil and heat for 40 seconds then add the minced garlic and cook for 60 seconds.
  • Pour the chicken broth, enchilada sauce(1cup), cilantro, and the chicken and cook gently for 5 minutes. While doing all these, preheat the oven.
  • Pour a quarter cup of the chicken mixture on each tortilla.
  • Roll gently and place it in the baking pan to avoid leakage from the tortilla.
  • Sprinkle the shredded cheese.
  • Bake for approximately 12 minutes. After 12 minutes, sprinkle green onions.
  • Remove the pan from the and use a Turner to take it out carefully…

Notes

  • The total cook time doesn’t include time for making your own tortillas or enchilada sauce. You will have a great time with the family having this as a great picnic dish. The sauce can be used as desired. Enjoy your low carb enchilada bake.
