Delicious and healthy Keto stir fry recipe that will leave your family or friends begging for more.

Ingredients

  • 1 lb chicken breasts (boneless)

  • 2 cups of bell peppers (chopped)

  • 1 cup broccoli florets

  • 1 teaspoon of garlic (minced)

  • 1 teaspoon of minced ginger

  • 1 teaspoon of chili paste

  • 2 tablespoons of vegetable oil

  • 1 cup of cauliflower florets

  • ¼ cup of soy sauce

  • ¼  cup honey substitute

  • ¼  cup vinegar

Directions

  • Place a skillet on a stovetop and heat (medium heat), Heat one tablespoon of vegetable on the skillet.
  • Using a knife, cut the chicken to dices, then add diced chicken to the skillet to cook, while  stirring it at intervals for about 6-7 minutes.
  • Move the chicken to a separate plate when done cooking.
  • Add the second tablespoon of oil to the skillet, add broccoli, cauliflower, and peppers, allow them all to cook for up to 5 minutes, stir often till they become tender.
  • In a small bowl, add vinegar, soy sauce, garlic, honey, chili paste, and ginger. Add to the skillet and stir often, cook for about 3 minutes.
  • Pour in the chicken into the skillet and cook for about 2 minutes. 
  • Serve hot.

Notes

  • Stirring while cooking is very important, it’s called the keto stir fry for a reason. If you do not stir continuously, you might get a burned meal at the end.
