How I Make My Keto Meatloaf Recipe

For my meatloaf, I like to use lean ground beef because sooner or later, I will need to wrap it in bacon and throw it in the oven. Don’t get it? You sure will soon.

Firstly, you need to mix your preferred beef with onion, pepper, and garlic. For the pepper, you can settle for minced bell pepper.

After that, you need to stir in some eggs, almond flour, salt, pepper, cheddar, crushed pork rinds, parmesan, and Worcestershire sauce.

Using your hands, mix it well, and then form a loaf shape on your baking sheet.

Over the top of the loafed shape, place slices of bacon.

Place it inside your oven and bake for about 25 minutes.

Paleo Meatloaf Binder

There are lots of options you can go with for the binder, but I use almond flour, this is because almond flour holds the meatloaf together a whole lot better. 

Another option is pork rinds, keto meatloaf pork rinds work great and will add no extra carbs to your meatloaf. 

What is the difference? Almond flour leaves you with a heavier meatloaf and a few added carbs, while pork rinds leave you with a lighter meatloaf and no added carbs.

Best Topping For This Paleo Keto Meatloaf

Given that your meatloaf has been in the oven and has baked for 25-30 minutes, you can whisk the meatloaf sauce and spread it over the top of the meatloaf.

Here’s what the topping consists of:

  • Italian salad dressing.
  • Ketchup (sugar-free).

It’s a big yes! It is very much freezer-friendly, I know most people prefer making their meal and eating it all at once with no left-overs, but what if you just can’t take any more meatloaf? Storing it in a fridge would be the best option.

Best Side Dishes To Go With

For me, I think Keto meatloaf is best-served alongside a side dish. There are quite a lot of side dishes that can go with this recipe, but here are some of my favorite.

  • Cauliflower Mac and cheese.
  • Cauliflower potato salad.

My special Keto Meatloaf recipe is one that will leave you drooling and begging for more after you had the first bite. It is easy to make and it doesn’t take much time.

Ingredients

  • 1 clove of garlic.

  • ½ cup of shredded cheddar.

  • 1 teaspoon of salt.

  • ½ onion.

  • 1 green bell pepper.

  • 1 teaspoon of ground black pepper.

  • 1 green bell pepper.

  • 4 slices of thin cut bacon.

  • 3 tablespoons of sugar-free ketchup.

  • ¼ cup of powdered parmesan cheese.

  • 1 tablespoon of Worcestershire sauce.

  • 2 eggs.

  • ½ almond flour.

  • 1 tablespoon of bottled Italian salad dressing.

Directions

  • Preheat your oven to about 375 degrees.
  • Cut up the onion, green pepper and garlic into small pieces.
  • In a large bowl add the items you just minced, also add eggs, ground beef, parmesan cheese, cheddar, salt, pepper, Worcestershire, and almond flour. 
  • Use your hands to thoroughly mix.
  • Shape the mixture into a small loaf and place it in a baking dish.
  • Place the bacon slices over the meatloaf.
  • Put in the oven and leave for 25-30 minutes.
  • Whisk Italian dressing and ketchup together, slightly pour over the meatloaf.
  • Increase the heat a bit and bake for about 5-10 minutes.
  • Bake until the internal temperature reaches 160 degrees.
  • Take it out of the oven and allow to cool for about 7 minutes before serving. 

Notes

  • For your meatloaf you can decide to use beef or probably keto turkey meatloaf, the choice is yours. If your meatloaf won’t hold well together, you can settle for almond flour. Also, you would need to preheat your oven to about 375 degrees.
